NHM 101, Introduction to Human Nutrition – Internet Three hours. Introduction to principles of the science of nutrition, with implications for and applications to food selection for individuals of all ages. Faculty: S. Saylor; C. Williams NHM 105, Personal Nutrition – Internet Three hours. Discussion and application of nutrition as it relates to personal health. This course is semester bound. NHM 195, Introduction to Dietetics and Nutrition - Videotape (taped each fall) One hour. An overview of the professions in nutrition and dietetics. Course includes guest speakers and lectures. Faculty: S. Hancock NHM 201, Nutrition in the Life Cycle - Internet Three hours. Application of principles of basic nutrition to each stage of the life cycle. Emphasis is on the relationship of nutrition to growth, development, and health. Prerequisite: NHM 101. Faculty: Y. Neggers NHM 210, Dynamics of Weight Control - Videotape Three hours. Analysis of interaction of nutrition and exercise in weight control. Techniques for measuring energy needs, estimating body composition, applying nutrition principles to weight control, and evaluating popular diet and exercise programs. NHM 305, Vegetarian Nutrition - Internet Three hours. This course will provide students with an introduction to vegetarian nutrition, including background information on general nutrition. This course will also cover a vegetarian diet’s role in disease prevention, sources of plant-based nutrients, vegetarian diets throughout the life cycle, food policy, and how to implement vegetarian diets into different areas of dietetic practice. NHM 361, Nutritional Biochemistry – Videotape (taped each fall) Three hours. Intermediary metabolism of carbohydrates, fats, and proteins with emphasis on homeostatic regulation in health and disease. Faculty: R. Lane NHM 362, Nutrition at the Cellular Level - Videotape (taped each spring) Three hours. Physiological and chemical bases of nutrient needs. Prerequisites or co requisites: NHM 101,201, 253, 361, BSC 215:216 or permission of department head. Faculty: Y Neggers NHM 365, Nutrition in Medical Science I - Videotape (taped each spring) Three hours. Study of principles for modifying normal nutrition requirements; includes an integrated series of lectures, observations and clinical experiences in health care facilities. Prerequisites or co requisites: NHM 101,201, 253, 361, BSC 215:216 or permission of department head. Faculty: D. Morrison NHM 373, Purchase and Design in Food Service Systems – Videotape (taped each spring) Three hours. Principles, methods and techniques used in purchasing food and equipment. Analysis of layout and design and of techniques used in evaluating work flow. Faculty: A. Niuh NHM 432, Nutrition Counseling and Education – Videotape (taped each fall) Three hours. Focuses on counseling skills and selected counseling theories as they apply to nutrition counseling. Incorporates principles of education in teaching nutrition to various populations. Faculty: L. Knol NHM 454, Experimental Food Science– Internet (available year-round) and Videotape (taped each fall) Three hours. Chemical and physical factors affecting food preparation, experimental methods applied to food preparation problems. One (1) hour lecture, four (4) hours laboratory, three (3) credit hours. Prerequisites: NHM 101, NHM 253, CH 105, and BER 345 (corequisite). Writing proficiency is required for a passing grade in the course. NHM 463, Community Nutrition - Videotape (taped each fall) Three hours. Prerequisites: NHM 201 and NHM 363. Nutrition assessment of individuals and groups; provision of nutrition services in the community. Faculty: L. Knol NHM 465, Nutrition in Medical Science II - Internet Prerequisite: NHM 365. Continuation of NHM 365. Lectures, independent study, and discussions that involve responsibility in the total nutritional care of the patient. Faculty: M. Peters NHM 475, Management of Food-Service Systems - Videotape (taped each fall) Prerequisites: NHM 372, NHM 373, and NHM 374. Three hours. Through lectures and class discussions, the theory, functions, and principles of management are applied.
