    HES Foods Lab

    ​It’s all about food, says one University of Alabama professor. “Food is the core of nutrition, and it’s an integral part of the hospitality industry,” said Dr. Mary Kay Meyer, professor in the human nutrition and hospitality management program, as well as assistant dean in UA’s College of Human Environmental Sciences. “We talk about what food does to the body, but if you can’t get the food into the body, you’ve lost the battle,” Meyer said. “I want students to be excited about food and really appreciate what you can do with food, if you have the right equipment.”

    Students enrolled in food and nutrition courses should have no problem garnering that enthusiasm, thanks to the $1.5 million state-of-the-art foods lab located on the ground floor of Doster Hall. The foods lab, which opened in the fall of 2013, gives food and nutrition students access to the traditional gas ranges and conventional ovens, as well as providing them opportunities to experiment with induction units, combi-ovens (a combination steaming unit and oven) and a convection oven. They will also have the smaller pieces that every high-quality foods lab needs – pressure cookers and fryers, mixers and more.

    Former graduate teaching assistant Morgan Patterson, of Demopolis, said most students learn about this equipment in class, but they do not have an opportunity to work with it until they are in the work force. “Having this opportunity just increases their skill set,” said Patterson. 

    Human nutrition and hospitality management are not culinary programs. The courses focus on the science behind food and how principles of food preparation impact nutrient content, taste, texture and appearance. “Although there are ovens and ranges in this lab, we blend the science experimentation, which uses chemistry lab supplies like beakers, pH strips and titration equipment, with culinary applications,” said Dr. Kristi Michele Crowe, a food chemist, dietitian and assistant professor of nutrition at UA. “In other words, we teach how the concepts of food chemistry are used in the food industry to develop food products, yet the same principles are taking place in one’s own kitchen.”

    “Understanding the science of food has allowed for an explosion of nutritious food choices with reasonably long shelf-lives,” Crowe said. “Without the understanding of the chemistry of macro and micronutrients and the interactions between them, dietitians could not adequately counsel patients on how to modify their diets for health and wellness.

    Students can also utilize the new food sensory lab to conduct research studies. Meyer said the department has wanted to build that research component, but this is the first time they have had the facilities to do so. The audio-visual component of the lab brings a new dimension to the curriculum for the department’s online programs by having taped demonstrations made available to distance-learning students. In addition, students enrolled in catering and quantity food production courses have utilized the lab to learn operation and safety of commercial cooking equipment.     China Retail Study Tour

    China is the number one supplier of textiles and apparel to the United States and it is also expected to be the world's largest retail market by 2018. The China Retail Study Tour program is designed to give students opportunities to learn and experience China's apparel industry and retailing market first-hand. The two weeks in China includes visits to the fashion school, corporate headquarters, designer studios, garment factories and major retailers as well as the top tourist attractions in Beijing and Shanghai.

    ​TUSCALOOSA, Ala. — The University of Alabama’s College of Human Environmental Sciences presented Brian Taylor with the Joseph Rowland Teaching Award at its Homecoming Convocation Sept. 30.
    The award is given annually to recognize CHES teaching excellence.
    Taylor, an instructor, has been a vital contributor to the College since becoming a clothing, textiles and interior design instructor in 2006. He is responsible for the senior clothing selection and recommended using the yearly event as a Fashion for Life fundraiser.
    Over the past year, Taylor served as a member of four CHES committees and was involved with invitation design and event planning in addition to merchandise development for “Little AL,” a spectator football toy. He also worked with graduates for the Huntsville Fashion Art Fusion Runway Show at the Huntsville Museum of Art.
    “As a teacher creating a pathway for his students – from novice to professional – Brian provides a role model for his students that proves invaluable as they execute the tricky world of fashion design,” said Dr. Shirley Foster, assistant professor and chair of UA’s clothing, textile and interior design department, in her nomination letter on behalf of Taylor. “He is resourceful, talented and articulate.”
    Taylor devised a plan to involve members of the fashion industry with his students as they completed their final collections in 2014. This idea was a basis for the development of an advisory board for the fashion design concentration.
    Taylor earned his bachelor’s and master’s degrees from UA in 1999 and 2005, respectively. For his master’s project, he created and developed the nonprofit organization Planting Stitches. He received two grants from UA’s Office of Community Affairs to fund the project, which worked to match talented hand sewers in the Black Belt with companies that market hand-made apparel.
    Taylor has taught multiple classes at UA. Outside of academia, he has worked as a designer for Dillard’s, developing body styles and flats and designing two junior’s private label brands, among other initiatives.
    “He represents the future of our college,” said Foster. “He has respect for the past and the desire and ability to incorporate the needs of the future into his teaching, which helps our students grow ever more competitive in the work place.”

    HES Leadership Board Excellence in Scholarly Research AWard

    TUSCALOOSA, Ala. — The University of Alabama’s College of Human Environmental Sciences has selected Dr. Lori Turner as the 2016 recipient of the HES Leadership Board Excellence in Scholarly Research Award.
    The award is presented annually to a member in the College who demonstrates research or scholarly excellence.
    During her 19-year research career, Turner has published more than 100 manuscripts, at least five book chapters, eight editions of a student study guide and approximately 20 instructional manuals. She has presented at more than 140 national conferences as either the primary presenter or collaborator, and her research articles have been cited more than 750 times. She has also served as the chair of a dozen or more doctoral committees.
    Her research focuses on osteoporosis prevention, particularly the prevention of low bone density among college students. She has mentored many doctoral students and coordinates UA’s Undergraduate Research and Creative Activities Conference for the College.
    After earning a doctorate from The University of Alabama in 1997, Turner accepted a position with the University of Arkansas and was promoted to the position of associate professor in 2002. She returned to the Capstone in 2006 and accepted her current position of tenured professor.
    Turner’s 2001 publication in Journal of Women and Aging titled “Influence of Yard Work and Weight Training on Bone Mineral Density Among Older U.S. Women” was tremendously successful, and her overall work led to her selection as “Outstanding Researcher” in the department of health, human performance and recreation at the University of Arkansas in both the 1999-2000 and 2001-2002 academic years.
    Turner attained her bachelor’s degree in 1980 from Florida State University and went on to get her master’s in dietetics and nutrition from Florida International University in 1983. She then returned to FSU, where she earned a master’s in health education before attending The University of Alabama.

    2016 Jack Davis Awards

    TUSCALOOSA, Ala. — The University of Alabama College of Human Environmental Sciences presented the Jack Davis Professional Achievement Awards during recent homecoming activities on campus.
    This year’s honorees include Chad Barker, Heather Dill, Meredith Franks, Sheena Gregg, Jennifer Hairston, Lana Koenning, Matthew Maxwell, Laura McKoy, Grant Trick, Melanie Tucker, and Taylor Williams.
    The awards are presented annually to outstanding CHES alumni for their professional accomplishments. The awards have been given out since 1986. The College has awarded the recognition to more than 200 alumni.
    Chad Barker
    ​​Chad Barker:
    Barker, of Columbus, Mississippi, is a partner and the regional vice president of operations for Drayer Physical Therapy Institute and owner of Partner Core Fitness. Since 2002, Barker’s clinical practice has focused on occupational medicine, rehabilitation and spine care. He has experience throughout his field, including management, supervisory and clinical experience. A frequent presenter nationally and internationally, Barker holds several professional memberships. Barker received his bachelor’s degree from The University of Alabama while studying sports medicine and athletic training and his Master’s of Business Administration from Mississippi State University.

    Heather Dill
    Heather Dill:
    Dill, of Northport, Alabama, is the director of sales and marketing for the Embassy Suites in downtown Tuscaloosa, where she is responsible for developing and implementing marketing techniques, developing and maintaining relationships in the industry and communication with investors. In her career, Dill has worked with several hotels such as Marriott International, the Wynfrey Hotel, the Sheraton, Hampton Inn and Sandestin Golf and Beach Resort. Within the community, she is the publicity fundraising chair for the Junior League of Tuscaloosa and is a member of multiple professional associations. Dill received her bachelor’s degree in restaurant, hospitality & meetings management from The University of Alabama.

    Meredith Franks
    Meredith Franks:
    Franks, of New York, is senior product manager of women’s woven and product manager of women’s collection/Fashion Show for Joe Fresh. At Joe Fresh, Franks manages the overall product development process across departments, travels overseas on new vendor sourcing trips and works directly with the design team to ensure deadlines. She has close to 10 years of industry experience, specializing in production, product management and development. Franks earned her bachelor’s degree specializing in apparel and textiles, with a concentration in fashion retail, from The University of Alabama.

    Sheena Gregg
    Sheena Gregg:
    Gregg, of Tuscaloosa, is a registered dietitian nutritionist and assistant director of the department of health promotion & wellness at The University of Alabama. She spent the early years of her career working in hospitals across rural Alabama. Gregg has received multiple awards, including the Miriam J. Gaines Leadership Award by the Alabama Obesity Task Force. Frequently quoted in the mainstream media on topics such as weight management and eating disorders, Gregg has been a spokesperson for the statewide Scale Back Alabama Program. Named one of the 10 Agents of Change in the nutrition industry in 2015, Gregg received both her Bachelor and Master of Science, specializing in nutrition and hospitality management, from The University of Alabama.

    Jennifer Hairston
    Jennifer Hairston:
    Hairston, of Chattanooga, Tennessee, is the vice president of operations at Barnett & Company, a firm providing investment management and financial and estate planning consultations to its clients. She engages clients in development of financial plans, goals and risk tolerance. Immediately prior, she was the chief operations officer and financial planner for Campbell Asset Management, LLC in Chattanooga. Since January 2011, she has worked as an Adjunct Instructor at The University of Alabama, where she teaches financial planning techniques and develops case studies. Hairston received her bachelor’s degree in Commerce and Business Administration and master’s in both economics and family financial planning and counseling, all from The University of Ala

    Lana Koenning
    Lana Koenning:
    Koenning, of Atlanta, Georgia, is the manager of suite member services for the Atlanta Falcons Football Club, where she is responsible for scheduling, managing and budgeting for all of the suites in the new Mercedes-Benz stadium. Immediately prior, Koenning was account manager, Luxury Services, for the NBA Charlotte Hornets Sports and Entertainment. She has received numerous honors and awards throughout her career and has been a member of UA’s sports management alumni society for over five years. She earned both her bachelor’s and master’s degree, specializing in consumer sciences and sports business management, respectively, from The University of Alabama.

    Matthew Maxwell
    ​Matthew Maxwell
    Maxwell, of Sharpsburg, Georgia, is the manager of clinical program development for Cancer Treatment Centers of America— Medicine & Science, where he is responsible, in conjunction with the chief medical officer, for the development, implementation and managing of clinical strategy and of clinical programs and initiatives. He holds multiple professional memberships and certificates. Maxwell received his bachelor’s degree in business administration from the University of Georgia, his master’s in business administration from Texas A&M Commerce and his master’s in interactive technology from The University of Alabama. He expects to complete his doctorate in business administration at California Southern University in 2020.

    Laura McKoy
    Laura McKoy:
    McKoy, of Dallas, Texas, is the creative director and vice president of interior design for Omni Hotels & Resorts, where she oversees, manages and directs all aspects of interior design for Omni. In her career, she has worked on hotels all around the world, executed interior design concepts, managed outside purchasing agents, has traveled to present renovation ideas with the owner and developed an internet based design help desk. She is a member of UA’s College  of Human Environmental Science Leadership Board. McKoy received her bachelor’s degree in interior design from The University of Alabama.

    Grant Trick
    Grant Trick:
    Trick, of Birmingham, Alabama, is the owner of Design Industry Workroom in Birmingham, where he designs and produces custom upholstered furniture and other soft furnishings for designers and architects across the southeast. Recognized for his attention to detail, Trick has worked across the country for companies such as Tiffany and Co., Nautica, and Levi’s Dockers, all located in New York, and Trickey Studio in San Francisco. At Tiffany, he designed and fabricated custom props for both New York flagship and international stores. Trick received his bachelor’s degree from The University of Alabama— specializing in apparel design with a minor in Spanish.

    Melanie Tucker
    Melanie Tucker:
    Tucker, of Tuscaloosa, is an associate professor in the UA School of Medicine’s department of family medicine. In her career, Tucker has held faculty positions in multiple departments and is involved in various family and rural medicine areas within the College of Community Health Sciences. She has conducted research on topics ranging from “Health and Health Behaviors of UA Students” to “Implementation of a Culinary Medicine Course.” Frequently published, she has presented nationally and internationally. Tucker received her bachelor’s degree from Athens State University, her master’s from The University of Alabama and her doctorate in health education and promotion from The University of Alabama and The University of Alabama at Birmingham.

    Taylor Williams
    Taylor Williams:
    Williams, of Memphis, Tennessee, is clinical director at the Memphis Mental Health Institute and assistant professor in the department of psychiatry at The University of Tennessee Health Science Center College of Medicine. Frequently published, Williams has received multiple awards, including as a four-time recipient of the University of Tennessee’s Golden Apple Award for excellence in teaching Psychiatry Clerkship. Board certified in psychiatry, she received her medical doctorate from The University of Alabama School of Medicine, her Bachelor of Science, with a concentration in molecular biology, and her Bachelor of Human Environmental Science, with a concentration in human development and family studies, from The University of Alabama.
